Condiments of Nkuir

This a mixture of several spices mashed together to form a specific condiment.

The species making up these mashed condiments are not easily seen. It's also hard to smash it. It's been grated by hand. It takes a lot of time. Also, women don't have time to walk up and down in search of all the species.
 
So to easily have it in Cameroon you have to buy it smashed. It saves time and energy.

When you go to a Cameroon make and you as for " Condiments of Nkuir" it will be given to you.

Most of these species are;
- Only know by their vernacular names.
- Mostly found in the western region of Cameroonian. 
- Mostly or only use in the preparation of nkuir. 
- Mostly sold in the market by women from the west region of Cameroon.

The above reason explains while they are rare and mostly been sold grind. 


The following are the species making up " "Condiments of Nkuir". 

The names are in vernacular language. With a brief description in French. We are still looking for their English names.

• Mendak (grains of Monodora myristica).

• Olom or Hiomi (ecorces de l'arbre ail/scorodophloeus Zenkeri).

• Melam ( small fruits neighbors to White and black pepper).

• Nsa nshu ( small fruits neighbors to W&B pepper).

• Nsu'nflu ( roots fragments of tortueuse grisatre).

• Susue (aubergines locales).

• Tshutshe (fruits of tetrapleura tetraptera).

• So (wild pepper).

• Tshii (small dry fruits of brown color).

• Nga'na, o fhuihu (petite racines rougeatres).

• Nga'lomsi ( roots of Monodora myristica).

• Lom nkak (Afrostyrax lepidophyllus).

• Soh (capsicum frutescens).

• Ntshop (passive ou vinaigre cendres).

All these species are grated to form a brownish power, with a traditional scent. 

The scent is somehow unique.


As you noticed very few have English descriptions. We are working on that.
