Cocoyam



Cocoyam is one of the products which contributes to the base of a limitation in Cameroon.

It's scientific name is Xanthosoma Sagittifolium.

Another name is Chou caraibe, melange and in French, it's called Macabo.

It's mostly found in tropical areas where it is mostly consumed.

It's a fruit of a tree with large leaves and that can grow up to 3 meters long in tropical areas where there is high humidity.

The highest proportion of cocoyam production is recorded in Africa with the minority from Asia and the least proportion from Caribbean.

It's rich in slow sugar and starch.

Cocoyam contains starch which makes them an excellent source of carbohydrates. It contains dietary fiber and higher protein content than the majority of the tropical roots crops.

It also contains thiamine, calcium, niacin, magnesium, manganese, vitamin B, vitamin C, vitamin E, copper, r and riboflavin.

Cocoyam privilege by sportives.
Also for those taking a diet or going through a transformation because the starch provides more energy with less fat. Forever 100g of starch contains 2.2g of proteins, 0.2g of lipid and 32g of carbohydrates.

Cocoyam starch is suitable for patients with pancreatic diseases and individuals suffering from chronic liver problems and patients suffering from inflammatory bowel disease.

A scientific proved that starch grains of cocoyam is quite small, which suggests why they aid easy food digestion.
